Kitchari Recipe
Kitchari is a great mono-diet food for cleansing because it contains carbohydrates, fats, and proteins. It is great for all doshas and makes for the perfect meal after a fast or during a Panchakarma treatment. It is soul nourishing!
Ingredients:
1 C Mung Beans (green or yellow)
1 C Basmati Rice
6 C of water
Freshly grated ginger
Ghee
1/4 tsp Salt
1/2 tsp Coriander
1/2 tsp Cumin
1/2 tsp Mustard Seed
1/2 tsp Turmeric
Add fresh seasonal vegetables as you see fit.
Directions:
Soak mung beans overnight.
Boil mung dahl and rice together for about 20 minutes, or until soft. In a separate pan, saute the mustard seeds with ghee until they begin to pop and crackle. Add remaining spices to the mustard seeds and mix together until a paste is formed.
Add the spice mixture to the rice and dahl and mix thoroughly. Add salt and pepper to taste. (Fun fact: pepper helps to activate the curcumin in the turmeric.)
